Lemon Rice Recipe 🍋🍚
Ingredients
For the Rice:
- 2 cups cooked rice of IndRizo's Premium Raw Rice
- 1½ tbsp lemon juice
- ½ tsp turmeric powder
- Salt to taste
For Tempering (Tadka):
- 2 tbsp oil or ghee
- 1 tsp mustard seeds
- 1 tsp urad dal (split black gram)
- 1 tsp chana dal (Bengal gram)
- 1-2 green chilies (slit)
- 2 dried red chilies
- 8-10 curry leaves
- ¼ tsp asafoetida (hing)
- 2 tbsp roasted peanuts or cashews
For Garnish:
- 2 tbsp chopped coriander leaves
- 1 tbsp grated coconut (optional)
Instructions
Step 1: Prepare the Rice
- Cook 2 cups rice, spread it on a plate, and let it cool slightly to avoid mushiness.
Step 2: Prepare the Tempering
- Heat oil or ghee in a pan.
- Add mustard seeds and let them splutter.
- Add urad dal, chana dal, red chilies, and curry leaves. Fry until golden brown.
- Add green chilies, asafoetida, and peanuts/cashews. Sauté for a minute.
Step 3: Mix with Rice
- Add turmeric powder and salt to the pan. Mix well.
- Add the cooked rice and mix gently.
- Turn off the heat and add fresh lemon juice. Mix well.
Step 4: Garnish & Serve
- Garnish with coriander leaves and grated coconut.
- Serve with papad, pickle, or curd.
