Lemon Rice Recipe 🍋🍚

Ingredients

For the Rice:

  • 2 cups cooked rice of IndRizo's Premium Raw Rice
  • 1½ tbsp lemon juice
  • ½ tsp turmeric powder
  • Salt to taste

For Tempering (Tadka):

  • 2 tbsp oil or ghee
  • 1 tsp mustard seeds
  • 1 tsp urad dal (split black gram)
  • 1 tsp chana dal (Bengal gram)
  • 1-2 green chilies (slit)
  • 2 dried red chilies
  • 8-10 curry leaves
  • ¼ tsp asafoetida (hing)
  • 2 tbsp roasted peanuts or cashews

For Garnish:

  • 2 tbsp chopped coriander leaves
  • 1 tbsp grated coconut (optional)

Instructions

Step 1: Prepare the Rice

  1. Cook 2 cups rice, spread it on a plate, and let it cool slightly to avoid mushiness.

Step 2: Prepare the Tempering

  1. Heat oil or ghee in a pan.
  2. Add mustard seeds and let them splutter.
  3. Add urad dal, chana dal, red chilies, and curry leaves. Fry until golden brown.
  4. Add green chilies, asafoetida, and peanuts/cashews. Sauté for a minute.

Step 3: Mix with Rice

  1. Add turmeric powder and salt to the pan. Mix well.
  2. Add the cooked rice and mix gently.
  3. Turn off the heat and add fresh lemon juice. Mix well.

Step 4: Garnish & Serve

  • Garnish with coriander leaves and grated coconut.
  • Serve with papad, pickle, or curd.
